Mint tea



INGREDIENTS

Idli



INGREDIENTS
  1. Rice -500
  2. Baking soda -about 30 gm
  3. Urad dal -250
  4. Salte -as required
PREPARATION
  • Soak rice and urad dal separately in water  in the evening
  • At night,grind urad into fine paste&grind rice too but roughly.Keep them to ferment at night
  • At morning,mix the fermented paste,add salt and baking soda and mix it well
  • Oil hands and pour a ladleful of above paste in idli mould
  • Put idli moulds in idli cooker and add as required quantity of water into it and heat the pan
  • In a short time steam will cook idli paste into soft fluffy mass
  • Serve it hot with sambar,chuttney or chammanthi...

Farfalle in tomato sauce



INGREDIENTS
  1. Pasta -1 pack
  2. Olive oil -2 tablespoon
  3. Water -as required
  4. Salt -as required
  5. Refined oil -1/2 teaspoon
  6. Tomatoes -2,3
  7. Diced onions -1 cup
  8. Crushed garlic -4,5 cloves
  9. Capsicum -4 tablespoon
  10. Chopped olives -1 tablespoon
  11. Pepper powder -1 teaspoon
  12. Chilli flakes -1 teaspoon
  13. Oregano herbs -1 teaspoon
  14. Tomato sauce -2 tablespoon
  15. Parmesan cheese -3 tablespoon
  16. Grated parmesan cheese -as required
PREPARATION
  • In a pan,add water,salt,pasta and boil the pasta
  • In a separate pan , boil tomatoes and blanch them
  • After deskinning and de-seeding them,roughly chop the tomatoes
  • Heat oil in a pan,onion and garlic and stir and fry till golden brown
  • Add yellow capsicum,tomatoes,required salt,pepper powder,chilli flakes,oregano herbs,tomato sauce and cook for 5-6 minutes
  • Add boiled pasta and parmesan cheese and mix well
  • Remove in a serving plate and add oregano herbs,grated cheese and chilli flakes
  • Serve it hot...

Coconut balls




INGREDIENTS
  1. Grinded coconut -2 cup
  2. Condensed mill -1/2 cup
  3. Vanilla essence -1 teaspoon
  4. Almond essence -1/4 cup
  5. Chopped Cashew nuts -1/4 cup
PREPARATION
  • Heat the microwave oven up to 350 degree centigrade
  • Make a mix of all ingredients and make it in the form of balls
  • Keep for 15 min in the oven
  •  Bake it until the mix become golden colour and serve it hot...

Italian salad




INGREDIENTS
  1. Cucumber -100 gm
  2. Carrot -2
  3. Tomato -100 gm
  4. Iceberg lettuce -100 gm
  5. Olives -50 gm
  6. Chopped cheese -50 gm
  7. Capsicum -1
  8. Fresh mushroom -4

Squid fry

    Cornflour -100 gm

  7. Baking powder -1 pinch
  8. Water -as required
  9. Oil -as required for frying
PREPARATION
  • Wash the squid well
  • Make a mix of ingredients from 2-4
  • Make a mix of ingredients from 5-7 with suitable amount of water
  • Fry the squid in it
  • Tartar sauce can be used to make it delicious

Honey glazed prawns



INGREDIENTS
  1. Prawn -150 gm
  2. Lemon juice -2 lemon
    Dough -50 gm
    Cornflour -25 gm
    Egg -1
    Salt -suitable amount
  3. Onion -80 gm
  4. Garlic -10 gm
  5. Ginger -5 gm
  6. Celery -3 gm
  7. Grinded kashmiri chilli -30 gm
  8. Ajinomoto -2 pinch
  9. Tomato sauce -20 gm
  10. Honey -30 ml
  11. Coconut or sunflower oil -250 ml
PREPARATION
  • First clean the prawns well, then apply the 2nd ingredient on it and roast it in oil
  • Heat a pan and pour of oil, add chopped onion,garlic,ginger,celery and stir it well
  • Add kashmiri chilli paste,stir it well until its well cooked. Then add 8-11 ingredients and mix it well
  • Put the roasted prawn into the mix
  • Garnish it with cucumber,capsicum,lemon,coriander and serve it hot...

Apollo Chicken



INGREDIENTS
  1. Boneless chicken -10 pieces
  2. Curd -50 ml
  3. Chilli powder -1 pinch
  4. Fennel powder(jeera) -1 pinch
  5. Turmeric powder -1 pinch
  6. Fennel seed -5 gm
  7. Cornflour -50 gm
  8. Egg -2
  9. Sliced ginger,garlic,green chilli -total 50 gm
  10. Sliced onion -30 gm
  11. Oil -suitable amount for frying
  12. Salt and pepper -suitable amount
PREPARATION
  • Mix curd with chilli powder,turmeric powder,fennel powder and keep it aside
  • Mix cornflour with with egg, sink the chicken pieces in the mix and fry
  • Heat a pan, put ginger,garlic,green chilli,onion in it and stir it well
  • Put curd mix into it and bake for a few min
  • Put the chicken piece into it and add salt and pepper
  • Garnish it with mint leaves and serve it hot...

Chinese roast chicken


INGREDIENTS
  1. Chicken -1
  2. Chicken stock -1 ltr
  3. onion -2
  4. Ginger -10 gm
  5. Garlic -10 gm
  6. Grinded red chilli -5 gm
  7. Spring onion -4
  8. Celery -2 stem
  9. Cornflour -50 gm
  10. Soya sauce -2 teaspoon
  11. leek -1 stem
PREPARATION
  • Cut the chicken into 4 pieces
  • Make a mix of chicken stock,soya sauce,onion,ginger,garlic,salt and chicken, then broil it
  • Make a thick sauce of chopped onion,ginger,garlic and chilli paste
  • Add suitable amount of water,soya sauce,salt,pepper. Add cornflour to make it thick and place it separately
  • Heat a pan, pour chilli sauce,chicken stock and add salt and pepper
  • Add broiled chicken into it and stir well, take out the pan from stove
  • Garnish it with spring onion,leek,cabbage and serve it hot...

Chicken reshmi kabab



INGREDIENTS
  1. Boneless chicken sliced into small pieces -1 kg
  2. Grinded garlic,ginger -100 gm
  3. Chicken fat -50 gm
  4. Grinded green chilli -50 gm
  5. Salt&Oil (sunflower or coconut) -Suitable amount
  6. pepper powder -1 teaspoon
  7. Cardamom powder -1 teaspoon
  8. Onion rings -as required
  9. Sliced lemon -as required
PREPARATION
  • Make a mix of ginger,garlic,chicken fat,green chilli,salt,oil,pepper powder and cardamom powder
  • Marinate chicken in this mix and set leave for 2 hrs
  • Grill chicken in at 180*c
  • Garnish with onion rings and sliced lemon

    Chicken cashew curry


    INGREDIENTS
    1. Chicken pieces -500 gm
    2. Chopped onion -2 big one
    3. Chopped ginger -1 teaspoon
    4. Chopped garlic -1 tablespoon
    5. Sliced green chilli -5
    6. Coconut -1(cut 1/4 of coconut into small pieces. Take coconut milk from remain coconut)
    7. Turmeric powder -1/2 teaspoon
    8. Chilli powder -1/2 teaspoon
    9. Coriander  powder -1 teaspoon
    10. Chopped tomato -2
    11. Oil (sunflower or coconut) -1 tablespoon
    12. Ghee -1 tablespoon
    13. Cardamom -3
    14. Cloves -3
    15. Cinnamon -3 small piece
    16. Curry leaves -1 stem
    17. Cashew nut -1/2 cup
    18. Water -1 1/2 cup
    19. Salt -suitable amount
    PREPARATION
    •  pour oil in a pan and add onion,ginger,garlic,chilli and coconut,stir it
      well till the mix is well cooked
    • Add turmeric powder,coriander powder,chilli powder,tomato,salt and chicken pieces
    • Add 1 1/2 cup of water and cook well for 10 to 15 min
    • Slightly open the lid of the pan and add coconut milk and cashew nut,cook for about 5 min
    • Mix little amount of cornflower in cold water and add it to the curry
    • Finally pour ghee in a pan and fry cardamom,cloves,cinnamon and curry leaves and mix it with curry
    • Serve it hot...

    Fish biriyani



    INGREDIENTS
    1. Fish, long sliced pieces -1/2 kg
    2. Chilli powder -1/2 tablespoon
    3. Turmeric powder -1/2 tablespoon
    4. Salt - a few
    5. Onion, thin sliced pieces -2
    6. Dented ginger -1 piece
    7. Onion -
    8. Green chilli -10
    9. Fennel seeds -1 teaspoon
    10. Garam masala -1/2 teaspoon
    11. Salt -suitable amount
    12. Basmathi rice -2 kg
    13. Coconut milk -suitable amount
    PREPARATION
    • Clean the fish
    • Make a thin batter(mix) of salt,chilli powder and turmeric powder, then add fish to this and mix it well
    • Fry the fish (shallow fry)
    • In pressure cooker, put some salt,coriander leaves,fried onion and yogurt
    • Add grinded ginger,onion,green chilli and fennel seeds
    • On the top of this mixture ,spread the fried fish
    • Add 2 cups of water and cook well for 10-15 min
    • When it is cooked , add coconut milk,garam masala,fried onion and lemon juice
    • Boil the basmathi rice adding suitable amount of salt and water
    • Mix the fish masala(fried fish mixture) with boiled rice
    • Garnish with fried cashew and raisin
    • Serve it hot...

    Chicken Biriyani



    INGREDIENTS
    1. Biriyani rice -1/2 kg
    2. Chicken -1/2 kg
    3. Coconut oil -150 gm
    4. Ghee -2 tablespoon
    5. Dented Ginger&Garlic -1 tablespoon
    6. Turmeric powder -1 tablespoon
    7. Fennel seeds -1/2 teaspoon
    8. Cardamon,Clove&Cinnamon -suitable amount
    9. Green chilli -4 ,slited
    10. Salt -suitable amount
    11. Cashew nut&Raisins -50 gm
    12. Onion -3, long sliced
    13. Coriander leaves,Mint leaves&Curry leaves -suitable amount
    14. Curd -1 cup
    15. Lemon -1
    16. tomato&Onion -2 
    PREPARATION
    • Boil the basmathi rice in a pan adding suitable amount of salt and water
    • Take a fry pan, pour few drops of coconut oil, then add onion,ginger,garlic and stir it well.
      Then cook on a low flame
    • Add fennel seed,coriander powder,turmeric powder. Also add cardamom,cinnamon and clover
    • Add chicken,tomato,lemon juice,salt and necessary water (2 cups is enough)and cook well
    • Fry some onion,cashew raisins and keep it separately
    • Now take a plain dish plate, put the chicken into it and spread it well. On the top of it, spread the boiled rice
    • Then cook on a low flame
    • Finally garnish it with the fried cashew,raisin and onion, then serve it hot

    • Mix juiced curd with ice water&stir it well
    • Add salt,pepper&jeera powder to it & mix it well

    Njandu roast(Crab roast)


    INGREDIENTS
    1. Crab -1 kg, well cleaned
    2. Coconut oil -4,5 tablespoon
    3. Grinded ginger -2 teaspoon
      Grinded garlic -2 teaspoon
    4. Small onion -15, dented
    5. Chilli powder -3 tablespoon
      Coriander powder -1 tablespoon
      Turmeric powder -1/2 teaspoon
      Pepper powder -1 teaspoon
    6. Diluted coconut milk -1 cup
    7. Salt -suitable amount
    8. Vinegar -1 teaspoon
    9. Coconut milk -1/2 cup
    PREPARATION

    • Pour oil in a pan, add ginger&garlic,stir well till  the mix is well cooked
    • When it becomes brown add dented small onion to it cook well
    • Make a mix of chilli powder,coriander powder,pepper powder and turmeric powder with water and pour to it
    • When a well smell come from it, pour diluted coconut milk into it,then add salt and vinegar
    • When the milk is set and become thick, put our crab into it. When the crab is well cooked and when the diluted milk become dry up, add coconut milk and finally cook it in small flame for 5 more min. Your dish is ready now
    • If you want to make some touch ups. Garnish it with onion rings or cucumber and serve it hot...

    Beef cutlet


    INGREDIENTS
    1. Beef -1/2 kg
    2. Chilli powder -2 teaspoon
      Pepper -1 teaspoon
    3. Coconut oil -suitable amount
    4. Onion -3
      Green chilli -5 or 6
      Ginger -1/2 inch slice
    5. Potato -2
    6. Salt -suitable amount
      Vinegar -few amount
    7. Egg -2
    8. Bread crumbs -1 cup
    PREPARATION
    • Broil beef with chilli powder and pepper,Then slightly grind it and place it separately
    • Pour cococnut oil in a pan, When it is boiled add chopped onion,green chilli,ginger and stir it well.
    • Add broiled beef, steamed and grinded potato
    • Mix it with salt , vinegar and make small balls out of it
    • Make each balls into the shape of cutlet and sink it in egg, then put it in bread crumbs and fry
    • Garnish it with onion rings for a little touch up and finally serve it hot with tomato sauce

    Chicken With Coconut


    INGREDIENTS
    1. Chicken breast  -1/2 kg, without bones and skin
    2. Onion -small 1, finely chopped
    3. Green chilli -2, long sliced 
    4. Garlic -2 cloves, finely chopped 
    5. Coconut milk -1 cup
    6. Stock (boiled chicken stock) -1 cup
    7. Salt -1/2 teaspoon
    8. Ghee -2 tablespoon
    9. Steamed amaranthus -400gm
    PREPARATION
    • Melt the ghee, gently stir onion,green chilli,garlic about 5 min in a low flame
    • Put chicken pieces into it and gently stir it for about 4 to 5 min. Add other ingredients to it and cook it in low flame for about 20 min. Make sure whether the chicken is well cooked
    • Serve it hot with chapatti or rice...

    Grilled Pearl Spot Fish-(Karimeen Pollichathu)


    INGREDIENTS
    1. Pearl spot fish -1
    2. Red chilli -30gm without seed
      Small red onions -35gm
    3. Vinegar -suitable amount
    4. Coconut oil -2 tablespoon
      Salt -suitable amount
    PREPARATION
    • Clean and cut the fish well and make lines with knife on either side
    • Mix the red chilli peppers,red onion and vinegar and grind it 
    • Mix coconut oil and salt with it and knead, then apply the mix on fish
    • Finally grill the fish
    • Garnish the dish with onion rings and serve hot
